General Info: Red Lion Beef Corporation is the parent company to the Lion s Choice restaurants in the greater St. Louis area. Lion s Choice, established in 1967 in Ballwin, Mo., has 19 restaurant locations in Illinois and Missouri. It also has two locations in Hattiesburg, Miss. The restaurant s menu items include roast beef sandwiches, barbecue beef and pork, hot dogs, chili dogs, fries, chips, soup, chili, custard, ice cream, cookies and beverages. The average Lion s Choice restaurant serves nearly 1,900 pounds of beef per week; 8,333 pounds per month; and 100,000 pounds per year.
