Wonderful eating experience!

Tilth is one of the only certified organic restaurants in Seattle. The food is wonderful and very rich. A real dining experience. The staff are all very friendly and attentive. The only negative comment is that the portions are a bit small.



Iron Chef Worthy

Have dinner at this small restaurant in Wallingford and it is easy to see how chef Maria Hines could beat legendary Iron Chef Morimoto in the kitchen stadium. The food is simply fabulous!!

The little touches are key

I love the little touches at this restaurant. Small bowls of salt at each table with a little spoon. And they've brought dessert samples to me before. They are very customer service oriented and have interesting dishes using organic, healthy ingredients. And the small, intimate setting is lovely.

Disappointing - good idea, but food was just not good enough

Tilth is great in concept - an all-organic upscale dining expeience in a quaint Seattle neighborhood. It was highly rated in online reviews - and media reviews, plus had good vegetarian options, so we tried it while in Seattle for a visit.... and total fail. It just wasn't good enough for what it cost and for all of the buzz. They offered us a disturbing lemon balm amuse bouche that was slimy and salty, and other dishes like the duck burgers and english pea risotto were middlin at best. The duck burgers were bland and the risotto bordered on soupy. My husband ordered fish that had an elegant presentation but the actual preparation of the fish was less than expert. Overall, we had high expectations that were dashed by the execution. And at $175 for three people (without a bottle of wine) it was way too expensive for the overall experience.

For someone who cannot stand peas to like a fresh pea soup, you know the kitchen is top-notch.

After hearing rave reviews from a friend, I just had to make a reservation. Said friend, upon hearing that I was heading to Tilth, decided to sacrifice having the same meal twice (wink wink) and joined me this Friday for Tilth's five-course tasting menu with wine pairings.

We started with an amuse bouche of rhubarb with olive tapenade. I am not a rhubarb fan, but the olive tapenade was (you'll sense a theme here soon) fresh and the flavors sublime.

First up, the English Pea Soup (pea leaves, cr?me fra?che, lemon balm) accompanied by a Reisling (2007 Gunderloch, 'Jean-Baptiste', Riesling, Rheinhessen, Germany). Truly, I hated peas in my high-chair but oh boy they knocked my socks off in this soup! Any fresher and I would have had to put the peas in a time-out in the corner. Consider my world rocked.

Next, a mushroom-something-I-couldn't-remember-nor-pronoun ce (Morel Mushroom Plin: sheep sorrel, green garlic, cipollini onion) paired with an Italian white (2008 Pieropan, Soave, Italy). The pasta/mushroom/mushroom/onion/savory combination was absolutely wonderful, one of the standouts of the evening. We actually ran out of bread trying to sop up the mushroomy goodness at the bottom of our bowls.

The fish course was St. Jude's Albacore Tuna (chickpea cake, yogurt-dill coulis, oven dried tomato) with 2008 Joseph Drouhin, Macon-Villages, France. I mean this in the best way possible: the first bite in which I was able to gather every individual ingredient onto my fork tasted in the most wonderful way like a McDonald's Filet-O-Fish. Keep in mind that I have not tasted one of those since oh, say 1978, but honestly, it tasted like the best aspects of that iconic sandwich. Superb!

The final meaty course was the Grilled Eel River Sirloin (fris?e, lardon vinaigrette, sous vide egg) paired with a nice Rioja (2007 Palacios Remondo, 'Vendimia', Rioja, Spain). Who knew grass-fed could taste so perfect? And, of course, the addition of a smoky lardon-y flavor (hiding discreetly underneath the frisee) took it over the top. I learned something new tonight: an individual french fry, dipped into an undercooked egg yolk, tastes amazing. Perhaps this is how mayonnaise first came about.

Dessert arrived early in the form of a subtly fizzed glass of Moscato (2008 Andrea Faccio, Moscato D'Asti, Italy). Resisting the urge to simply dive in and make a splashy mess, we held off until dessert arrived. It was an avocado mousse (candied ginger, cilantro syrup, lime). And it tasted like love. Goooooood stuff.

All courses were well-paired, and this just added to the overall lovely experience. We were so happy that we asked how often the tasting menu changed, already plotting and planning our next foray to Tilth.

And yes, we shall be returning soon.

food was good but the pacing was off

we had a nice meal but we ordered the cheese plate to start and it came with the meal..........i was very annoyed. The serverd didn't offer to take our meal away so we could enjoy what we wanted to start with ... for the price I would expect them to know what the heck they are doing.

Glad we have this place around!

I have eaten at Tilth several times, both for brunch and dinner, and the food is always excellent. Service seems better than it used to...much more friendly and casual than when the place first opened. Cocktails are not to be skipped -- I had something with ""poodle"" in the name that was genius mixing alchemy. Nice wine selection too. The menu has the option to go small or large with each dish, so you can order a nice variety of things to taste without stuffing yourself silly. I love the use of the sous vide technique, which they usually have for one or two dishes. I generally don't order dessert, but at my last visit a tiny little chocolate-toffee concoction was brought on a little spoon for the perfect taste of something sweet at the end of the meal. Very grateful that Wallingford has a place like this around!

One of the better meals I've had in a long time

My one and only experience at Tilth was a couple of weeks ago and I am still raving about the meal. A couple of friends and I had been wanting to go after reading the many positive reviews and decided to share plates. We started with the mushroom soup poured at the table over a dollop of creamy goodness, the porcini creme brulee and the crostini. The crostini with chevre and roasted hazlenuts was a favorite. If The creme brulee was wonderful and came with frisee and porcini salt. The bean cassoulet was by far and away the night's favorite dish - smoky, rich and savory. The hanger steak with brussel sprout leaves was good and cooked to order. The least favorite dish was the sablefish with chickpeas. Don't get me wrong, it was good but the fish was very pungent and a bit flavorless unless eaten with the chickpeas in each bite.
For dessert we had the Theo chocolate ganache cake and the brown butter and almond cake. Both were great but I am partial to chocolate anything.
Overall the service was very good and what I would expect from an upscale restaurant. The tables are close together so there is not a lot of privacy but overall the ambiance is quaint and cozy. My only complaint about the atmosphere is the restaurant gets very drafty when people come and go as they forgot to pull the second door shut before opening the main door. Try to sit towards the back if you can! Another word of warning, if you are going with a big appetite or are expecting large portions, you will be disappointed.

not impressed

I recently visited Tilth and was drawn to it based on the reviews it received. I loved the atmosphere and the service, but the food left very much to be desired. I was not impressed by the menu and the fish dish I ordered was missing any sort of flavor, had an awful texture, and was paired with a heavy fried chickpea something and cauliflower! Not only but it had a wierd cucumbery sauce that just didn't make sense. I am not normally a complainer about food...but this was seriously awful. The duck sliders were ok...the butternut squash soup was fine...and the wine was blah (at least the one I had). I was so sad and disappointed. I would not go again, it was not worth it.

Mediocre food and service

My husband and I were recently drawn to Tilth Restaurant because of the great reviews it has received. However, we were really disappointed with the very very tiny portions at very very high prices. My warm prawns ""entree"" was underdone and cold in the middle. The pace of the service was random. The acoustics were terrible and we had to talk very loudly to hear one another above the noise in the room. It didn't help that our waiter jumbled his words and spoke softly. When I finally told him that I had a very difficult time hearing him, he seemed highly annoyed. I wouldn't go back to this restaurant. I found it unnecessarily pretentious for what it offered. There are so many great options in Seattle to eat fabulous food that has been raised by local farmers. My two cents.
