True Mexican street food that begins with a thick, palm-sized tortilla made from corn or wheat flour, quick-grilled and then cut open to form a pocket. Gorditas are then stuffed with Mexican regional specialty stews, ranging from Carnita en Salsa Verde (slow-cooked pork in green chile sauce) to Pollito Pibil (chicken with citrus achiote sauce), to Quesadillas, to Frijolitos con Queso (bean with cheese) and many more to choose from.
