Ko at the Fairmont Kea Lani - Maui, HI

Boasting a menu with more influences than a United Nations mixer -- Hawaiian, Chinese, Filipino, Portuguese, Korean and Japanese -- Ko recently reopened after a $5.3 million renovation yielding, essentially, a brand new restaurant. And a beautiful one at that. The cuisine is produced primarily from local Maui farms, delivering delectable dishes such as the Ohana Style Ko Pupus (left), a tasty trifecta of Kobe Beef Poke, Crispy Calamari, and Chicken and Mushroom Lumpia. Add posh, poolside views to the mix and this one becomes a trip topper.
