The Beer: La Chouffe Houblon
A "hybrid beer" with a Champagne-like effervescence, La Chouffe Houblon features the dry hops presence of a traditional India Pale Ale in concert with the delicate sweetness of a Belgian ale. But don't let this golden-hued liquid fool you: La Chouffe Houblon (also known as Houblon Chouffe) is much more complex than any "yellow beer" you may have had in the past.
La Chouffe Houblon is an unfiltered beer that continues to ferment in the bottle until you pop the top, so it will appear cloudy in your glass. The nose is slightly citrusy with mild and sweet floral notes. The taste is crisp -- you get a bit of the citrus, plus a pleasant candy sweetness that provides balance to the hops.
Houblon Chouffe is the perfect aperitif and would be a nice complement to a cheese plate, especially, or dinner salad served prior to the main course. It also goes well with milder fish, such as a lightly seasoned grilled salmon, and also may play nicely with a dessert featuring peach or apricot.
