The Dish: Edamame Dumplings ($7)
The Story: Chef Michael Schulson wanted his customers to start the new year off in style, with a sense of renewal and a helluva good meal. So, he's preparing a "Year of the Snake" Prix Fixe menu for $55 (per person) at his restaurant, Sampan, in Center City, Philadelphia. The edamame dumplings (pictured above) aren't on the special menu, but that's the good news. You can find them on the everyday menu -- served in a golden sake broth with truffles and pea shoots. They go down quite smooth. Yes 'mame.
