The Buckhorn Exchange - Denver, CO
Though it's been around since 1893, The Buckhorn Exchange is not for the squeamish. That is, if you're a tofu-chugging, quinoa-loving eater with a conscious, it's possible you'll be put off by the elk, quail and alligator tail on the menu (not to mention the 500-plus animals affixed to the walls, watching you eat their cousins). There are also Rocky Mountain Oysters (which I'll leave to your next Wikipedia search). Get past this and you'll likely love Buckhorn for owning who they are, their hefty steaks and even their famous bean soup. One dish that won't be nailed to the wall anytime soon.
