Hinoki & The Bird - Century City, CA

Renowned chef David Myers' (Sona, Comme Ca) newest Los Angeles outpost, Hinoki & The Bird, is inspired by his recent travels along the 4,000-mile Silk Road on the other side of the world. From this excursion, Myers hatched many innovative ideas about what to include in this restaurant venture. One element was his love of hinoki, a Japanese cypress wood, highly prevalent throughout the MAI Studio-designed interior. So deep is his love that you can find it on fire flavoring such dishes as the Hinoki-Scented Black Cod (shown above with the salmon).
