The Dish: Beet cake with fromage blanc and roasted walnut ice cream

The Sitch: At a restaurant well known for serving up "the green fairy" (absinthe) comes this purplish, veggie-infused dessert. This specialty has the spirit of carrot cake, but with a highfalutin twist in the form of Blandy's 10-Year Madiera Rich Malmsey -- a rich wine that lends a bit of nutty, caramel and honey flavor to the festivities.

Other Veggie Treats: Brentwood corn soup, spicy fried chickpeas and the Fried Costata Romanesca squash.
