Honduran El Pastal Fair Trade/organic
we chose this micro-lot coffee of only 26 bags over 9 other honduran micro-lots all scoring 87 or above. a very high-grown 100% bourbon varietal, it feature notes of mild berries and sweet apple, with a tangerine finish. referred to as a honey coffee or pulped natural; at origin, the skin or cherry from the coffee is removed, like the first step in the wet process method, but instead of fermenting and removing the fruity mucilage, the coffee is dried with the fruit clinging to the parchment layer. the beans are sticky and will immediately go to drying beds and raked in the sun to dry. it's very time consuming and risky for the farmer, but it usually pays off by offering a coffee with more body and less acidity than the wet process. bean, french, drip (flat bottom), drip (cone), espresso, turkish
