We love Hui Chuan. We eat their probably 3-4 times a month. The owner (Hui) is very friendly and almost always there to make sure that everything is running smoothly. Although it is in a strip mall it is very cozy and ""Japanese"" inside. They even have a back room with seating for about 10 that has a sunken floor under the table so you can sit on the floor comfortably. The sushi is consistently at a high level. They have many innovative texas fushion rolls that are very tasty (many use jalapeno, or slices of ribeye). On a more traditional note, their Chirashi is a great deal at $17. It is sometimes very crowded (Sunday nights for instance) and the service gets slow since they normally have only 1 waitress. I would recommend a weeknight.
