If buttermilk pancakes for breakfast sound just 'blah,' try Chef Ethan Kostbar's Snooze Pineapple Upside Down Pancakes at Moderne Barn, which defy everything you thought you knew about flapjacks. Not only do pineapple rings invade this distant cousin of pineapple upside down cake, but there's a bit of cinnamon rum butter in there for added kick. Other bravery points go to his Hungover Piggie (left), a sausage stuffed pork loin wrapped in bacon, bell peppers, onion, provolone polenta and sunnyside-up eggs. It does everything but oink.
